Stuffed Baigan

A vegetable treat, stuffed baigan is a combination of spices stuffed with roasted peanuts and til seeds in baigan or Brinjal. A true culinary delight, reminiscent of Indian spicy cooking, stuffed baigan is best enjoyed with Rotis.
- Grind together one quarter of the tamarind, chilies, coriander and cumin seeds to a paste.
- Toast the onion on low flame till charred. remove burnt skin and grind onions to a smooth paste. mix with ground tamarind pulp.
- Soak remaining tamarind in one cup water. keep for half an hour and strain. add jaggery and simmer to sauce consistency.
- Cut brinjals crosswise, 3/4 towards the stem end. fill slits with paste. heat oil lightly, fry brinjals. place them in the tandoor, pour over the tamarind sauce and cook in the preheated tandoor, covered, for 5 to 7 minutes.
