Cooking Time: Total Time:
400g. Button mushrooms, quartered,
2tbsps Ginger julienned,
2tsp l light Soya sauce,
salt and pepper to taste,
4 eggs, beaten,
2-4 Spring onions, chopped fine
- Heat oil in a frying pan or a wok. add ginger juliennes and button mushrooms. sauté for 5minutes or till soft . add soya sauce and vinegar. cook for a minute. sprinkle salt and pepper. scramble the eggs separately and add to the mushrooms and spring onions. mix lightly and serve hot
