Have the salad with hot garlic bread or toss some pasta in it to make it more filling.

1 cup capsicum , cut into thin strips
1 cup paneer (cottage cheese) , cut into thin strips
1 spring onion , sliced
1/2 cup baby corn , sliced and parboiled
1/2 cup cucumber , sliced
1/2 cup broccoli florets , parboiled
1/4 cup bean sprouts
1/4 cup tomatoes , deseeded and sliced
1 tsp nigella seeds (kalonji)
1 tsp oil
salt to taste
  1. Heat the oil and add the onion seeds.
  2. Add all the vegetables and salt and sauté on a high flame till the vegetables are tender.
  3. Add the paneer and sauté for another minute.
  4. Remove from the flame and serve immediately.

This has every healthy vegetable you want and the taste is greatly enhanced with Kalonji seeds. Love the bright color of these crispy vegetables.
