Learn an easy way of preparing a healthful bowl of creamy green spinach soup. The spinach is blended with coriander and mint leaves and the puree is added along with spices to water . Enjoy the hot spinach or palak soup with toasted croutons and grated cheese as topping.
- Heat oil in a saucepan
- Saute onion and ginger till onion are transparent
- Add vegetable stock and coconut milk
- Add peas, chilli sauce, soy sauce and salt
- Bring the stock to boil
- Add spinach and let it cook for approx 5-7 mins.
- Add pepper powder
- Serve hot with steaming rice
