Ingredients

For The Rice
2 1/4 cups cooked rice
5 tbsp milk
1 tbsp butter
salt to taste

For The Spinach Mixture
2 1/4 cups chopped spinach (palak)
1 tbsp ghee
1/2 tsp cumin seeds (jeera)
1/2 cup finely chopped onions
1 tsp finely chopped green chillies
salt to taste
Method
For the rice

  1. Heat the butter in a broad non-stick, add the rice, milk and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.

For the spinach mixture

  1. Heat the ghee in a broad non-stick pan and add the cumin seeds.
  2. When the seeds crackle, add the onions and green chillies and sauté on a medium flame for 1 minute.
  3. Add the spinach and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.

  1. Put the rice on a serving plate, put the prepared spinach mixture in the center and serve immediately.

Quick, simple and heart warming... this is an excellent recipe option... well this recipes fit best... when you have spinach at home and are tired of eating the regular palak subzi with roti... in very little time with the basic ingredients.. you can stir up something as exotic.. is now true to believe..
