Dough for Base :
3 cups plain flour (maida)
warm water
2 tbsp oil
1/2 tsp dried oregano
dash of salt

about one bunch of fresh spinach leaves chopped
1/3 cup chopped white onions
1/2 cup finely chopped parsley (1 Table Spoon dried)
1 tsp freshly ground black pepper (kalimirch) powder
a pinch of thyme
4 cloves garlic (lehsun), crushed
salt to taste

  1. Mix dough ingredients;
  2. Knead for about 2-3 minutes by adding flour to until it doesn''t stick to the hands
  3. Separate into 3 equal parts
  4. Keep them aside
  5. Mix the filling ingredients
  6. Roll out the 3 dough balls - so that each one is a bit bigger than your baking pan (i use 8x12 in.) - the amount of dough, for that size will give you the right thickness
  7. Place the first layer on the greased pan, with ends hanging over the pan rim - add half the filling
  8. Follow on with the second dough layer -add the rest of the filling
  9. Finish off with the last dough layer using the third part of the dough.
  10. Fold the dough layers together
  11. Pluck a few holes, making sure you go through the second layer of dough
  12. Bake for 45 min. at 400f
