A novel variation to the sweet delicacy modak, spicy steamed modak has a savory spicy filling in the rice flour based pouches. The modaks are steamed and relished as snack with green chutney.

Spicy Steamed Modak recipe - How to make Spicy Steamed Modak

Ingredients

For The Stuffing
50 gms sprouted moong (whole green gram)
1 of ginger (adrak)
1 cup chopped coriander (dhania) leaves
3 tsp chopped green chillies
1 tsp cumin seeds (jeera) powder
1 tsp coriander (dhania) powder
1 tbsp jaggery (gur)
1 lemon
1/2 tsp salt
a pinch of turmeric powder (haldi)
1 tbsp oil

For The Covering
100 gms rice flour (chawal ka atta)
a pinch of cumin seeds (jeera)
a pinch of salt
1/2 tsp oil

For The Garnish:
basil leaves
lemon slices
cloves
Method

For the stuffing

    For the stuffing
  1. Combine the ginger, coriander leaves and green chillies and blend in a mixer till smooth. Keep aside
  2. Heat the oil in a pan, add the sprouted moong and the prepared paste, mix well and cook for 10-12 mins untill the moong is well cooked.
  3. Add the turmeric powder, salt, jaggery, coriander-cumin seed powder, mix well and cook for 5-6 mins.
  4. Remove from the flame, cool completely and mash the mixture lightly.
  5. Divide the stuffing into equal portions and keep aside.

For the covering

  1. Heat 1 cup water in a deep pan, add the salt,cumin seeds and oil.
  2. When it starts boling add the rice flour and mix well.
  3. Knead it in he water using spoon.
  4. Heat for 10-15 mins untill flour is fully cooked and flour becomes glossy.
  5. Remove from the flame and keep aside to cool.
  6. Divide the dough into equal portions and keep aside.

How to proceed:

  1. Take a modak mould and apply very little oil on the inner walls of it.
  2. Put a portion of the rice dough and press against the walls and make a hallow covering. (use water to spread the dough).
  3. Place a portion of the stuffing inside and fill it well.
  4. Cover the base, the open area with the dough again.
  5. Remove from the mould.
  6. Repeat the same steps to make more modaks.
  7. Place them in and idli steamer and steam for 10-15 minutes. .
  8. Remove and garnish with clove sticks, tulsi leaves and lemon chips.
  9. Serve hot.
