Spicy Mushroom Soup recipe - How to make Spicy Mushroom Soup

Preparation Time:    Cooking Time:    Total Time:     Makes 2 to 4 servings

9-10 medium mushrooms (khumbh) , chopped
5 cups vegetable stock
1/4 cup finely chopped carrots
1/3 cup cauliflower finely chopped
1/3 cup finely chopped cabbage
1/2 finely chopped capsicum
2 tbsp finely chopped garlic (lehsun)
1/4 cup finely chopped spring onions
1 tbsp oil
1 tsp butter
1 tbsp chillies in vinegar
2 tbsp soy sauce
3 tbsp cornflour , mixed with 1/2 cup vegetable stock
salt to taste
a pinch of sugar
freshly ground black pepper (kalimirch) to taste
  1. First heat the oil and butter in a pan on a high flame.
  2. Add the garlic and saute for sometime.
  3. Add mushrooms, capsicum and cook for 3-4 minutes on a high flame.
  4. Add all vegetables mentioned in ingredients and saute well.
  5. Add the vegetable stock in pan and keep the pan in medium flame for some time so that all vegetables are properly boiled.
  6. Add salt, soya sauce, chilli with vinegar, sugar, spring onion.
  7. Add the cornflour paste and pepper powder, mix well and boil for 1 minute.
  8. Turn off the flame and serve the soup hot with chilli in vinegar and soya sauce.
