Just had some bellpeppers and soya chunks handy and needed to make a quick subzi. So just added some onions and tomatoes to it with simple spices. It turned out very delicious and everyone loved it.

  1. Soak soya chunks for about half an hour, drain and finely chop them.
  2. Heat oil in a non-stick pan, add the onions and sauté for 2 minutes. Add tomatoes, chopped red, yellow and green capsicums, spring onions and soya chunks. Add salt and cover the pan with a lid and let it cook over aslow flame.
  3. After 5 minutes open the lid, add garam masala, turmeric powder and pepper powder and sauté on low flame for a minute.
  4. Serve immediately.
