Semolina Strawberry Phirni recipe - How to make Semolina Strawberry Phirni

For The Strawberry Sauce
3 cups chopped strawberries
3 tbsp sugar

For The Phirni
1/2 cup semolina (rava)
1 tsp ghee
4 cups milk powder
1/2 cup sugar
2 drops rose essence
1/2 tsp cardamom (elaichi) powder
1/4 cup chopped almonds (badam) and pistachios for garnishing
For the strawberry sauce

  1. Combine the strawberries and sugar in a non-stick pan and cook on a slow flame till smooth and saucy.
  2. Keep aside to cool and refrigerate to chill.

For the phirni

  1. Roast the semolina in a non-stick pan, till it turns golden brown.
  2. Boil the milk in another pan, reduce the flame and add the semolina and ghee, gradually, while mixing well.
  3. Whisk well and cook till mixture becomes thick and smooth.
  4. Add the sugar, rose essence, cardamom powder and nuts and mix well.
  5. remove from the flame, when sugar melts and mixture becomes thin.
  6. Cool and add the strawberry sauce and refrigerate till chilled.
  7. Serve chilled.
