Schezuan Paneer Pakoda recipe - How to make Schezuan Paneer Pakoda

Preparation Time:    Cooking Time:    Total Time:     Makes 4 serving


For The Schezuan Sauce
1 tbsp oil
chopped onions
1 tbsp ginger-garlic (adrak-lehsun) paste
8-10 whole dry kashmiri red chilli , soaked in water
8-10 garlic clove
1 tbsp chopped coriander (dhania)
1 tbsp vegetable stock
1/2 tsp freshly ground black pepper (kalimirch)
1 tsp sugar
salt to taste
2 tbsp tomato ketchup
1 tsp vinegar

For The Batter
1 cup besan (bengal gram flour)
salt to taste
pinch of baking soda
water as required

Other Ingredients
7-8 sliced paneer (cottage cheese)
oil for frying
For schezuan sauce

    For schezuan sauce
  1. Heat oil in a pan and add onions and ginger garlic paste and saute till pink.
  2. Meanwhile grind soaked chillies and garlic cloves to a paste and add to the onions in the pan.
  3. Fry all for a while and put coriander,vegetable stock,pepper powder,salt,sugar,ketchup and vinegar.
  4. Mix all and cook for a while and off the flame.

  1. Mix all the ingredients and add enough water to make medium thick batter.

How to proceed

    How to proceed
  1. Take the paneer slices and spread the prepared schezuan sauce and top with another slice.
  2. Repeat to make more such paneer sandwiches
  3. Dip these sandwiched paneer in the batter prepared and deep fry in hot oil till golden on a medium flame and serve with tomato ketchup.
