A perfect winter curry which has the benefits of greens and potato. It goes well with makke ki roti.

Sarson Aloo ka Saag recipe - How to make Sarson Aloo ka Saag

Preparation Time:    Cooking Time:    Total Time:     Makes 3 to 4 servings

Ingredients
2 cups chopped mustard leaves
2 potatoes , chopped
1/2 tomato , chopped
2 onions , chopped
4 to 5 garlic (lehsun) cloves
4 to 5 green chillies
2 tsp chopped ginger (adrak)
1 tbsp tomato puree
2 to 3 tbsp ghee
1/4 tsp cumin seeds (jeera)
2 whole dry kashmiri red chillies
1/4 tsp turmeric powder (haldi)
1 tbsp coriander (dhania) seeds powder
a pinch garam masala
a pinch of asafoetida (hing)
Method
    Method
  1. Combine the mustard leaves, garlic cloves, green chilies and ginger and pressure cook with a cup of water till cooked.
  2. Cool and blend in a mixer to a paste. Keep aside.
  3. Heat a tbsp of ghee in a pan, add the onions and saute till they turn golden brown.
  4. Add the tomato and potato, salt and cook for 2 minutes.
  5. Add the tomato puree and mix well.
  6. Add the turmeric and coriander seeds powder and saute for a few seconds.
  7. Cover and cook till potatoes are done.
  8. Add the the mustard greens paste and half a cup of water and some garam masala and mix well.
  9. Heat another tbsp of ghee and add cumin seeds.
  10. When the seeds crackle, add one finely chopped garlic, asafoetida and 2 red chilies.
  11. Pour this tempering on the curry.
  12. Mix and serve immediately.
