Roasted Pumpkin Salad recipe - How to make Roasted Pumpkin Salad

Preparation Time:    Cooking Time:    Total Time:     Makes 3 to 4 servings

1 cup pumpkin , peeled and diced
1 medium size onion , sliced
1/2 cup chopped capsicum
1 cup paneer (cottagte cheese) cubes
4 to 5 lettuce leaves , torn
1 tsp oil

To Be Mixed For The Dressing
1 tbsp lemon juice
1 tsp chaat masala
1/2 tsp freshly ground black pepper powder
salt to taste
  1. Preheat oven at 180 degrees Celsius.
  2. Spread the pumpkin cubes on a baking dish/tray.
  3. Sprinkle a little salt on the cubes and bake it for 10 to 12 minutes. Keep aside.
  4. Heat the oil in a pan and fry paneer cubes till they are lightly brown on the edges. Drain the paneer cubes on a kitchen towel.
  5. Combine the roasted pumpkin, paneer cubes, onion, lettuce and capsicum in a bowl, mix well and refrigerate it till serving.
  6. Just before serving, pour the dressing over the salad and lightly toss the salad.
  7. Serve immediately.
