Here is a cheesy, garlicky dressing, which is ideal to make a pungent, creamy and chunky salad. While ingredients like mustard paste, cheese and olive oil, give the Roasted Garlic Dressing a luscious mouth-feel, garlic, vinegar and pepper give it a zesty and kind of overpowering flavour, which is ideal to perk up a salad with modest veggies.
The garlic is roasted in an oven, wrapped in aluminium foil. This helps to boost its flavour, so follow the same procedure when making this dressing.

- Cut the head of the garlic and discard it. Place the garlic on an aluminium foil, drizzle ½ tsp of olive oil evenly over it.
- Wrap it well from all the sides and roast in a pre-heated oven at 200ºc (400ºf) for 25 minutes.
- Remove the garlic from the foil and peel it.
- Combine all the ingredients along with the roasted and peeled garlic in a mixer and blend till smooth.
- Use as required.
