Roasted Chilli Corn Salsa recipe - How to make Roasted Chilli Corn Salsa

Preparation Time:    Cooking Time:    Total Time:     Makes 5 serving

3/4 cup sweet corn kernels (makai ke dane)
3/4 cup finely diced tomatoes
1/4 cup finely diced red onions
3/4 cup finely diced red capsicum
2 whole red chilies deseeded and finely sliced
2 tbsp fresh lemon juice
2 tbsp chopped fresh coriander (dhania) leaves
salt to taste
1/4 tsp cumin seeds (jeera) powder
1 tsp plain butter
  1. Heat a non-stick pan. Roast sliced red chilies on medium heat until it starts to crackle and changes its colour to light brown. Keep aside.
  2. Melt butter in a non-stick pan. Saute sweet corn for 5 minutes until cooked and tender. Sprinkle ground cumin on top. Cook for another two minutes. Remove from heat.
  3. Combine cooked corn, tomatoes,onion,bell pepper,roasted red chilies,lemon juice and coriander leaves in a mixing bowl. Mix well. Season with salt. Serve with your papads or assorted chips.
