What a sumptuous treat this Savoury Spicy Rice with Vegetables is! Cooked rice and a colourful assortment of veggies are perked up with a flavourful paste of coconut and spices, and garnished with deep-fried onions.
The addition of lemon juice helps to strengthen the flavour of the Rice with Vegetables, while green chillies and ginger add more spice to the paste. Enjoy this satiating rice dish hot and fresh as a one dish meal .
- Heat the ghee in a deep non-stick pan, add the prepared paste, mix well and cook on a medium flame for 2 minutes, while stirring continuously.
- Add all the vegetables, coriander-cumin seeds powder, chilli powder, turmeric powder and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Add the rice and lemon juice, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
- Serve hot.
