Famous Mexican recipe made healthy by adding more veggies and making it more fibre rich and nutritious. This healthy version of refried beans is worth a try!
Use these beans in recipes like Burritos or serve it with Baked Tortilla Chips .
- Heat the oil in broad non-stick pan, add the garlic and sauté on a medium flame for few seconds.
- Add the onions and sauté on a medium flame for 1 minute.
- Add the tomatoes and 2 tbsp water and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
- Add the capsicum, rajma, chilli powder, cumin seeds powder, salt and 2 tbsp of water, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
- Use as required.
