Rajni Ahuja's Lemon Ginger Sorbet recipe - How to make Rajni Ahuja's Lemon Ginger Sorbet

Preparation Time:    Cooking Time:    Total Time:     Makes 3 bottels of 700 ml

300 gms ginger (adrak)
2 kgs sugar
3 cups water
1/2 tsp citric acid (nimbu ka phool)
300 ml lemon juice
2 tsp lemon essence (optional)
1/3tsp sodium benzoit

For Serving
crushed ice
  1. Combine the ginger and little water in a mixer and grind to a smooth paste. strain and extract juice from it. Keep aside.
  2. Heat the pan add the sugar and water, and simmer it till the sugar is completely melt.
  3. Add the citric acid, mix well, this will help to clear the syrup.
  4. Add the ginger extract and lemon juice, mix well and simmer till the mixture turns to sticky.
  5. remove from the flame, add the lemon essence (optional) and sodium benzoit diluted in hot syrup, mix well.
  6. Allow to cool and store it in a sterilized bottles.

How to Serve

  1. Pour 3 tbsp of the prepared syrup in a tall glass, top with chilled water and little crushed ice.
  2. Served chilled.
