Ragi and Gaund Golpapdi recipe - How to make Ragi and Gaund Golpapdi

Ingredients
3 cups ragi (nachni / red millet) flour
1/2 cup roasted , puffed and crushed edible gum (gaund)
jaggery (gur) , grated
1/2 cup ghee
1/4 cup roasted and semi crushed almonds (badam)
1 tsp cardamom (elaichi) powder
1 tsp nutmeg (jaiphal) powder

For Garnish
poppy seeds (khus-khus) (khus-khus)
pistachios , sliced

For Serving
warm green tea or milk
Method
    Method
  1. Heat ghee in a non-stck kadhai and fry the ragi flour till it gives out a nice aroma, stirring continuously.
  2. Add gundar, almonds, cardamom powder and jaiphal powder. Mix well.
  3. Remove from the flame and add the jaggery,mix well.
  4. When the jaggery melts and the mixture is still warm, pour it into the greased thali and spread it evenly with the help of the base of a small bowl (katori).
  5. Cut into diamond shapes while still warm and garnish with khus khus and pistachio slivers.
  6. After half an hour or till it is set, remove the pieces and and serve it fresh with warm green tea or a glass of plain milk.
