Cooked spaghetti, together with mixed veggies, tomato ketchup and chilli powder, results in a very tasty meal, which will appeal to people of all age groups.

The composition of this dish is such that the veggies are of different textures and colours, so every mouthful is an experience to feast on. This Quick Spaghetti, interestingly, also stays fresh in the tiffin box for more than 4 hours, so you can comfortably send it to school or office too!

Ingredients

For Quick Spaghetti
2 1/2 cups cooked spaghetti
1 1/2 tbsp oil
1/2 cup finely chopped onions
1/2 tsp garlic (lehsun) paste
1/4 cup finely chopped capsicum
1 cup finely chopped tomatoes
1/2 cup boiled sweet corn kernels (makai ke dane)
1/4 cup tomato ketchup
1/2 tsp chilli powder
salt to taste

For quick spaghetti

    For quick spaghetti
  1. To make quick spaghetti, heat the oil in a broad non-stick, add the onions and garlic paste and sauté on a medium flame for 1 to 2 minutes.
  2. Add the capsicum and sauté on a medium flame for 1 minute.
  3. Add the tomatoes and 2 tbsp of water, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  4. Add the sweet corn, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
  5. Add the spaghetti, mix gently and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.

  1. Allow the quick spaghetti to cool completely, and pack in an air-tight tiffin box.

How to cook spaghetti perfectly

  1. To cook the spaghetti for the Quick Spaghetti recipe , take a deep non-stick pan, boil enough water.
  2. Add 1 tsp of oil. This is added so the spaghetti when cooked doesn’t stick to each other.
  3. Add the salt.
  4. Add the raw spaghetti. You can break it a little if you wish to.
  5. Cook on a medium flame for 12 minutes. Stir it in between using a flat spoon or else the noodles will break.
  6. Drain it well using a strainer. Keep around 2 tbsp of pasta water aside.
  7. Refresh it with cold water. This is very important as it stops the cooking process.
  8. Transfer to a plate.
  9. Cover it with a lid so that the spaghetti does not dry up and keep aside. 

How to make quick spaghetti

  1. To make quick Indian style spaghetti, take a broad non-stick pan, add the oil or olive oil and allow it to heat.
  2. Add the onions. This is a must as it tastes great. We have chopped them but you can even use thinly sliced onions.
  3. Add the garlic paste. Finely chopped garlic can also be used for better flavour. 
  4. Sauté on a medium flame for 1 to 2 minutes.
  5. Add the capsicum. Even coloured capsicum can be used if you have at home. This gives a nice crunchiness to the Quick Spaghetti recipe.
  6. Sauté on a medium flame for 1 minute.
  7. Add the tomatoes. Use red and firm tomatoes and chop them finely using a sharp knife.
  8. Add 2 tbsp of reserved pasta water. This is added so the tomatoes do not turn dry.
  9. Mix well and cook on a medium flame for 2 to 3 minutes, while stirring in between.
  10. Add the sweet corn. Make sure you have boiled the corn perfectly. It can be boiled in a microwave or on an open flame. Baby corn can also be used make sure you cut it diagonally and blanch them.
  11. Add the tomato ketchup. You can also add chilli sauce if you wish to add spiciness.
  12. Add the chilli powder.
  13. Add the salt and mix well.
  14. Cook on a medium flame for 1 to 2 minutes, while stirring in between.
  15. Add the spaghetti.
  16. Mix  quick Indian style spaghetti gently using 2 flat spoons.
  17. Cook  quick Indian style spaghetti on a medium flame for 3 to 4 minutes, while stirring in between.
  18. Serve this Quick Indian style Veg Spaghetti immediately or cool completely, and pack in an air-tight tiffin box.

This spaghetti recipe is so easy and has all the ingredients that would be available at home. I truly relish this recipe and I carry it to office at times as well.
