Quick Nawabi Curry

The royal vegetable curry recipe, nawabi curry has a medley of vegetables cooked in a spicy thick onion-tomato based curry. Enjoy nawabu curry with rice or paranthas.
- Add 1 cup of water to the tomatoes and cook until soft. Remove from the flame and keep aside to cool completely.
- Blend in a mixer till smooth to make a smooth puree.
- Heat the oil in a kadhai, add the ground paste and sauté for 2 to 3 minutes.
- Add the tomato puree, vegetables, sugar and salt, mix well and simmer for 5 to 7 minutes.
- Serve hot.
