  1. Combine the curds and salt in a deep bowl and mix well using a whisk.
  2. Add the pumpkin and mix gently. Keep aside.
  3. Heat the oil in a small non-stick pan, add the mustard seeds, urad dal, asafoetida and curry leaves and sauté on a medium flame for a few seconds.
  4. Pour this tempering over the pumpkin-curd mixture and mix gently.
  5. Refrigerate for atleast 1 hour and serve chilled.

Pumpkin raita with a perfect tadka can taste good with any meal, I even carry it to office and eat it as a snack when I am hungry.
