  1. Heat ghee in deep non stick kadhai and add the cumin seeds.
  2. When the seeds crackle, add the bay leaf and star anise and saute for 10 seconds.
  3. Add the ginger, green chillies and curry leaves and saute for more 10 seconds.
  4. Add the pumpkin, capsicum, fenugreek leaves and sugar and mix well.
  5. Add the cooked rice, salt, rose water and peanuts, mix well and saute for 5 minutes.
  6. Serve hot.
