2/3 cup sifted soy flour
3/4 teaspoon salt
1 cup sifted all-purpose flour
1/4 cup soy oil
1/4 teaspoon baking powder
1 1/4 cups sugar
3/4 teaspoon baking soda
4 egg whites, well beaten
1 1/2 tsp cinnamon (dalchini)
3/4 cup pumpkin, canned
1/2 tsp cloves (laung / lavang) powder
2 tablespoons water
1/4 teaspoon nutmeg

  1. Sift and measure soy flour and all-purpose flour. measure other dry ingredients except sugar, and sift together with flour. set aside. cream soy oil and sugar together. add egg whites and beat until light. blend in pumpkin and water. add dry ingredients in two portions, blending well after each addition. pour batter into greased 9x5x3 inch loaf pan
