It is technically a salad but practically a meal in its own right! The Primavera Salad is an easy and quick yet sumptuous preparation of cooked fusilli tossed together with crunchy lettuce, fresh and vibrant veggies and a refreshing curd-based dressing with celery and spring onion greens. Don’t forget the dash of pepper before you stash this into the refrigerator for a while! Try this on a hot summer’s day and you will want to keep repeating the experience – it beats hot, steaming food hands down.
- Combine all the ingredients in a deep bowl, mix well and refrigerate for 1 hour.
- Just before serving, add the dressing and toss well.
- Serve immediately.
