Malai kofta is a potato and paneer kofta curry (besan coated dumplings) simmered in a rich and spicy tomato based gravy.

Potato Malai Kofta recipe - How to make Potato Malai Kofta

For Koftas
400 gms grated paneer (cottage cheese)
1 cup freezed cream
2 tbsp plain flour (maida)
1 tsp salt
1/2 tsp baking powder

For Curry
1 tbsp butter
3/4 cup tomato puree
1 large onion , grounded into a paste
1/2 cup coconut milk
1/2 tsp ginger-garlic (adrak-lehsun) paste
1/2 tsp cinnamon (dalchini) powder
1/2 tsp garam masala
2 tsp tomato ketchup
1/4 tsp chilli powder
1/4 cup fresh cream
salt to taste
For koftas

  1. Mash the paneer with hands till smooth.
  2. Add the maida, salt, baking powder and mix well.
  3. Take a small portion of paneer in your hands and press the paneer with your hands to spread.
  4. Put ½ tsp of frozen cream in between and make a small elongated kofta.
  5. Make koftas in the same manner from the remaining mixture.
  6. Heat the oil in a kadhai and deep fry the koftas till they turn golden brown and crisp.
  7. Drain on an absorbent paper and keep aside.

For curry

  1. Heat the butter in a pan, add the onion paste and saute till it turns light brown.
  2. Add the ginger- garlic paste and saute for 1 minute.
  3. Add the garam masala, cinnamon powder, salt, red chili powder and mix well.
  4. Add the tomato puree and cook for 3 minutes.
  5. Add the coconut milk and milk, while continuously stirring and cook for 1 minute.
  6. Add the tomato ketchup along with 2 cups of water, mix well and bring the curry to a boil.
  7. Add the koftas and cook on a slow flame for 5 minutes.
  8. Serve hot koftas topped with fresh cream or malai.
