An easy to prepare nutritious and low in calories poha salad recipe is a perfect snack or starter recipe. Add a zing to the poha or flattened rice flakes salad with mint and coriander chutney and green chillies.

Poha Salad recipe - How to make Poha Salad

Preparation Time:    Cooking Time:    Total Time:     Makes 4 to 5 servings

1 tbsp peanuts , soaked for 4 hours
2 cups beaten rice (poha)
1 cup grated carrot
1 cup grated cucumber
1/2 cup freshly grated coconut
1 tsp ginger-green chilli paste
1 tsp cumin seeds (jeera) powder
1 pinch of asafoetida (hing)
salt to taste
sugar to taste
1 tbsp finely chopped coriander (dhania)
1/2 tbsp finely chopped mint leaves (phudina)
1 tbsp lemon juice
raisins (kismis) as required
  1. Wash and drain the poha and keep until the poha is soft and swells up.
  2. Combine all the ingredients, along with poha, in a bowl and mix well.
  3. Serve immediately.
