Poha Kachori recipe - How to make Poha Kachori

For The Covering
4 potatoes , boiled , peeled and mashed
2 slices of bread
1 tsp salt

For The Filling
2 tsp oil
1 onion , finely chopped
1 tsp coriander (dhania) seeds , coarsely crushed
1 tsp fennel seeds (saunf) , coarsely crushed
red chilli powder to taste
1 slit green chilli , finely chopped
1 tsp ginger (adrak) , finely chopped
2 tbsp chopped coriander (dhania)
1 lemon
1/2 cup beaten rice (poha) , washed and drained
salt to taste

Other Ingredients
1/2 boiled green peas for topping
2 tbsp poppy seeds (khus-khus) for coating
oil for deep frying frying
For the covering

    For the covering
  1. Dip the bread slices in little water and squeeze.
  2. Add the potatoes and salt and mix well.
  3. Divide the mixture into 8 equal portions and keep aside.

For the filling

    For the filling
  1. Heat the oil in a kadhai, add the onions and saute for one minutes.
  2. Add all the remaining ingredients, except the beaten rice and salt, and sauté again for two minutes.
  3. Add the poha, and salt and mix well.
  4. Keep aside to cool.

How to proceed

  1. Take one portion of the covering mixture and flatten it using your palms.
  2. Place a portion of the filling in between and seal giving the shape of kachoris.
  3. Roll each kachori in poppy seeds, deep fry in hot oil till they turn golden brown in colour from all the sides.
  4. Serve hot with dhania pudina chutney.
