Ingredients

For Making The Poha
1/2 cup finely chopped onions
2 cups beaten rice (poha) flakes
2 tbsp oil
1/4 cup raw peanuts
1/2 tsp mustard seeds ( rai / sarson)
1/2 tsp cumin seeds (jeera)
4 curry leaves (kadi patta)
2 tsp finely chopped green chillies
a pinch of asafoetida (hing)
1/2 tsp turmeric powder (haldi)
salt to taste

Garnish For The Poha
8 tsp freshly grated coconut
8 tsp nylon sev
8 tsp finely chopped coriander (dhania)

For Serving With The Poha
4 lemon wedges
Method
    Method
  1. To make the poha recipe, clean and wash the rice flakes in a sieve in enough water and keep aside.
  2. Heat the oil in a deep non-sick pan, add the peanuts and sauté on a medium flame for 2 minutes.
  3. Add the mustard seeds, cumin seeds, curry leaves, green chillies, asafoetida and onions and sauté on a medium flame for 1 to 2 minutes.
  4. Add the turmeric powder, rice flakes and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  5. Place equal portions of poha on 4 plates, garnish each plate with 2 tsp of coconut, 1 tsp of sev and 1 tsp of coriander evenly over it.
  6. Serve the poha immediately with lemon wedges.

Handy Tip for making Poha

  1. To make Maharashtrian Kanda poha recipe, the first step is to clean and put the beaten rice flakes in a strainer and wash the beaten rice flakes in enough running water to soften them.
  2. Drain all the water and keep aside. The poha must be moist and not wet.
  3. We have used onions in this recipe. You can use any vegetable of your choice to make different varieties of poha like Tomato poha, Corn poha, Green pea poha. 

How to Make Maharashtrian poha at home

  1. For the Maharashtrian poha recipe, heat oil in a non-stick kadhai or a deep pan. Once the oil is hot, add the raw peanuts. Sauté the peanuts to roast them on a medium flame. 
  2. Add the mustard seeds and cumin seeds.
  3. Add the curry leaves and finely chopped green chillies.
  4. Add a pinch of asafoetida and the chopped onions and sauté for 1-2 minutes. You can even substitute onions with potato to make batata poha
  5. Add turmeric powder, salt and mix well. The one and only spice used in this recipe which imparts a beautiful yellow color to the kanda poha. 
  6. Then add the poha, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
  7. Divide the poha into 4 equal portions. Place a portions of poha in a plate.
  8. Garnish the Maharashtrian Kanda poha plate with 2 tsp of coconut.
  9. Now sprinkle 1 tsp of sev on Kanda poha. We have used nylon sev, you can even use thick sev.
  10. Sprinkle 1 tsp of coriander evenly over Maharashtrian Kanda poha.
  11. Repeat steps 8 to 11 to make 3 more plates of the Mahrashtrian Kande poha. Serve the poha immediately with lemon wedges.

My favorite snack recipe which even the kids love. Kanda Poha can be made quickly and had as breakfast or an evening snack.

This recipe Kanda Poha is very similar to what we get mumbai roadside. I am really fond of it but do not prefer having it often due to the hygine issues. But now everytime i feel like eating, i make this recipe and enjoy it. So easy and quick recipe.
