Um, never met a kid who does not like pizzas nor one who can resist any other pizza flavoured treat! You might have tried topping bread or even rotis and rolls with pizza sauce, but now here is a totally unique tiffin of rice perked up with all-time favourite pizza sauce, colourful veggies and sweet corn too! Not only is the Pizza Rice delectably tasty, it is easy to prepare in the morning’s bustle and also stays good for over 5 hours. All this makes it a perfect choice to pack in the tiffin box. A combo of Pizza Rice and crunchy and delicious Crispy Pasta Snack ( Tiffin Treats) make a yummy lunch break treat.

Ingredients

For The Pizza Sauce [makes 1/2 Cup (approx. 7 Tbsp)]
3 large tomatoes
1/2 tbsp olive oil
1/2 tsp finely chopped garlic (lehsun)
1/4 cup finely chopped onions
1/2 tsp dried oregano
1/2 tsp dry red chilli flakes (paprika)
1 tbsp tomato ketchup
1/4 tsp chilli powder
salt to taste
1/4 tsp sugar

Other Ingredients
2 cups cooked long grained basmati rice (chawal)
1 tbsp olive oil
1 tsp finely chopped garlic (lehsun)
1/2 cup chopped capsicum (red , yellow and green)
1/4 cup boiled sweet corn kernels (makai ke dane)
1 tsp dried oregano
salt to taste
2 tbsp grated processed cheese
Method
For the pizza sauce

  1. Make criss-cross on the base of the tomatoes and place them in enough boiling water for 2 to 3 minutes or till the skin begins to peel.
  2. Drain the tomatoes, cool slightly, peel, deseed and roughly chop them and blend in a mixer to a smooth pulp. Keep aside.
  3. Heat the olive oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
  4. Add the onions and sauté on a medium flame for 1 to 2 minutes.
  5. Add the prepared tomato pulp, oregano, chilli flakes, tomato ketchup, chilli powder and salt, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  6. Add the sugar, mix well and cook on a medium flame for 1 minute, while stirring occasionally. Keep aside.

How to proceed

  1. Heat the olive oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
  2. Add the capsicum and sauté on a medium flame for 1 minute.
  3. Add the corn and sauté on a medium flame for 1 more minute.
  4. Add the prepared pizza sauce, dried oregano and salt, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
  5. Add the cooked rice, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.

How to pack

  1. Allow it to cool completely, and pack with the cheese sprinkled on top in an air-tight tiffin box, sprinkle cheese evenly over it.

Nice variation using pizza sauce... My daughter loves it in her dabba and her fellow mates also keep demanding for this recipe. So now whenever I make pizza sauce to make pizzas, I make it extra and put it in the deep-freezer to make this Indo-Italian fussion.

I get this often in my dabba and it stays fresh and nice even after 5 hours. So everytime i have pizza sauce left and do not want to put it on bread this is a great option..
