3 cups finely chopped pineapple
1 1/4 cups sugar
2 (200ml cartons) coconut milk (You can substitute 2 cups medium coconut milk+1 cup thick milk )
1 tbsp sago (sabudana)
2 tbsp ghee
2 tbsp chopped cashewnuts (kaju)
2 tbsp raisins (kismis)
1 tsp cardamom (elaichi) powder
1 tsp dried ginger (soonth) powder

  1. In a pressurepan,heat 2 tbsp ghee, roast cashew pieces & raisins , remove, add sago & fry till they all puff up uniformly.
  2. Add pineapple pieces & ½ cup water.
  3. Close the cooker & keep the weight.
  4. After the 1st whistle comes, simmer the stove & cook for 5 mts.
  5. Cool, open & lightly mash for a uniform mixture.
  6. Add sugar , dissolve on a low heat, stirring well.
  7. Now add the second milk or 1 carton coconut milk mixed with 1 carton of water.
  8. Cook, stirring on medium fire.
  9. Add cardamom powder, dry ginger powder & first milk or one carton coconut milk & switch off the flame immediately.
  10. Mix very well adding roasted cashews & raisins.
