3/4 cup oil
3/4 cup brown sugar
450 gms canned sliced peaches
20 sliced strawberries
2 1/2 cups plain flour (maida)
2 1/2 tsp baking powder
1/4 tsp salt
1 cup sugar
300 gms tofu
1/2 cup water
1 tsp vanilla essence
  1. Combine 1/4 cup oil and brown sugar in a bowl and spread evenly at the bottom of a 9" x 13" tin.
  2. Arrange the peach slices and strawberries on top of it. Keep aside.
  3. Combine the flour, baking powder and salt together in a bowl and mix well. Keep aside.
  4. Combine 1/2 cup oil, sugar, tofu, water and vanilla essence and together in food processor and blend it.
  5. Add flour mixture into the food processor and process until blended.
  6. Pour and spread evenly on top of the fruits.
  7. Bake in a pre-heated oven for 30 minutes or until golden, allow it to cool.
  8. Invert the cake on the plate facing the fruit side up.
  9. Cut into equal size triangles and serve.
