- To make pasta in tomato sauce, heat the butter in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
- Add the spring onion whites and sauté on a medium flame for 1 to 2 minutes.
- Add the fresh tomato pulp, chilli powder, tomato ketchup, ½ cup of water, salt, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
- Add the fusilli, herbs, fresh cream and spring onions greens, mix gently and cook on a medium flame for 1 minute.
- Cool the pasta in tomato sauce slightly and pack in a tiffin box topped with cheese.
- 4 medium tomatoes when blanched in water, peeled, deseeded, chopped and blended will give approx. 1 cup of tomato pulp.

Pasta in tomato sauce is a dish that is loved by kids and is very delicious, you can make this as an evening snack or also can use it as a tiffin recipe. Spring onions used in the recipe add up in making pasta more flavourful. You can add any hebrs and vegetables of your choice to make it healthier and tastier for your kids. For boiling the fusilli pasta perfectly for Pasta In Tomato Sauce, boil enough water in a large pan. If you use a small pan, the pasta will clump together on boiling
Cover the pan with a lid to make the water boil faster.
Once the water boils vigorously, add salt to taste. The salt will season the fusilli pasta as they cook, which will give you flavorful pasta. Also, the water when tasted should taste like sea water
Add the pasta to the boiling water and stir once.Cook uncovered, stirring occasionally and gently until the pasta is tender. Cooking times may vary with the size and the thickness of the pasta. Very small pasta (like macaroni, fusilli, conchiglie, penne) may cook in 5 to 7 minutes. Larger shapes (like spaghetti, fettuccine, dried lasagne sheets) may require 10 to 12 minutes. Refer the package instructions to understand the exact cooking time.
After 5 to 7 minutes, remove one pasta out of the water and keep it aside to cool a little. Bite into the pasta or break it with a fork to check if it's still hard in the center or if it's cooked as you like. For perfectly cooked pasta, cook until it's al dente, which means it is a little firm in the center.
Immediately drain the cooked pasta into a sieve or colander.
Transfer to a bowl of cold water or refresh under running water to prevent over cooking.
Drain again and keep aside.
If the pasta is not to be used immediately, add 1 tablespoon of olive oil to it and toss it. Though it makes difficult for pasta to absorb/coat the white sauce.
To prepare the fresh tomato pulp at home, boil enough water in a deep pan.
Take 4-5 medium sized ripe, red tomatoes and rinse them. We have used regular Indian tomatoes but, you can also make use of Italian tomatoes or Roma tomatoes if available.
Scoop out and discard the eyes of the tomatoes using the tip of a sharp knife.
Make a criss-cross cut at the base of each tomato. The “X” cuts helps in easy removal of skin after blanching.
Put the tomatoes in boiling water for 3 to 4 minutes or until the skin separates from the tomatoes.
Using a slotted spoon remove the tomatoes from hot water. Immerse them in cold water for some time. Refreshing prevents overcooking of tomatoes due to internal cooking and helps in retaining the bright red colour after blending.
When the tomatoes are cooled, peel and discard the skin and seeds. Chop roughly on a chopping board.
Transfer the chopped tomatoes to a mixer jar.
Blend them in a mixer to a smooth pulp without using any water. Keep the fresh tomato pulp aside and we will now proceed to make the Pasta In Tomato Sauce.

Add the prepared fresh tomato pulp. If you don’t have much time then a quick fix is to add canned tomatoes or readymade tomato pulp.
Add the chilli powder. Alternatively, you can add chilli flakes but, it won’t provide that bright red colour to the tomato pasta.
Also, add the tomato ketchup. It provides a beautiful tangy flavour to the red sauce pasta recipe.
Add around ½ cup of water and salt.
Mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally. The sauce will thicken a bit indicating the tomatoes have cooked.
Add the fusilli. While we have used fusilli pasta, you can make use of any other pasta variants like spaghetti, penne or macaroni.
Add the herbs. If you do not have herbs, just make use of fresh basil leaves, which is one of the most important ingredients of the red sauce pasta recipe or any other dried herbs like dried thyme, basil or oregano.
Add the fresh cream. This gives a creamy and rich flavour to the Pasta In Tomato Sauce recipe.
Add the spring onion greens. This is totally optional.
Mix gently and cook on a medium flame for 1 minute & our Pasta In Tomato Sauce is ready. Ensure the tomato sauce has coated the pasta well.
