Paneer and Pumpkin Sandwich recipe - How to make Paneer and Pumpkin Sandwich

Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings

Ingredients
1/2 cup roasted and finely chopped pumpkin
1/2 cup mashed paneer (cottage cheese)
1/2 cup boiled and crushed green peas
salt and freshly ground black pepper powder to taste
2 tsp roasted cumin seeds (jeera) powder
1/4 cup finely chopped canned pineapple
a few chopped basil leaves
8 bread slices
16 to 20 tender spinach (palak) leaves

For The Garnish
finely chooped spring onions

For Serving
green chutney
Method
    Method
  1. Combine all the ingredients in a bowl, mix well and keep aside.
  2. Place the bread slices on dry plate and place some fresh crisp tender or baby spinach leaves on it.
  3. Spread a thick layer of filling evenly on it and arrange few spinach leaves and cover it with bread slice.
  4. Cut into triangle, garnish with spring onions and serve immediately with green chutney.
