To Be Mixed Into A Marinade
1/2 cup thick curds (dahi)
1 tsp chilli powder
1/4 tsp turmeric powder (haldi)
1 tsp ginger (adrak) garlic (lehsun) paste
1/2 tsp besan (bengal gram flour)
3/4 tsp chaat masala
1/2 tsp dried fenugreek leaves (kasuri methi)
3/4 tsp garam masala
salt to taste

For The Paneer Tikka Filling
1 cup paneer (cottage cheese) cubes
1/2 cup onion cubes
1/2 cup capsicum cubes
1 tbsp oil for greasing and cooking

Other Ingredients
1 cup onion rings
chaat masala to taste
4 rotis
For the paneer tikkas

    For the paneer tikkas
  1. Combine the paneer cubes, onion cubes, capsicum cubes and the marinade in a bowl and toss gently. Keep aside to marinate for 30 minutes.
  2. Heat a non-stick tava (griddle), grease it with oil and cook the paneer- capsicum marinade on a medium flame for 2 minutes. Keep aside.

  1. Combine the onions rings with chaat masala in a bowl, mix well and keep aside.
  2. Place a roti on a clean dry surface and put 1/4th portion of the marinated paneer on each roti.
  3. Arrange ¼ cup of onion slices over it and roll it up tightly.
  4. Repeat with the remaining ingredients to make 3 more wraps.

Can we make our own marinade? if yes how and how much time it takes? recipe detail says to mix in marinade but no link for the same or no details for marinade for the same

Tarla Dalal    hi Sunil, the recipe says to be mixed which means mix all the ing for the marinade in a deep bowl, then add the paneer, capsicum, etc...

When I saute the marinated paneer and veggies it becomes watery and doesn''t roast like tikka. Any suggestions?

Tarla Dalal    Hi Urvi, first thing you make sure your dahi is thick hung curd which will not release water.Other thing you can do is microwave them for 20 mins or saute the paneer cubes and capsicum-onion separetely Do try and let us know your feedback.
