For The Paneer Stuffing
250 gms paneer (cottage cheese) , cut into fingers
1 onion , sliced
1 tsp chopped garlic (lehsun)
1 1/2 tsp ginger-green chilli paste
1 1/2 tsp red chilli paste
1 tsp dried fenugreek leaves (kasuri methi)
1 tsp chaat masala
1 tbsp oil
salt and freshly ground black pepper powder to taste

For The Pancake Batter
1 cup sprouted moong (whole green gram)
1 tsp ginger-green chilli paste
1/2 tsp turmeric powder (haldi)
1/4 cup chopped coriander (dhania)
2 tsp oil
1/2 tsp baking soda
salt to taste

    For the paneer Stuffing
  1. Heat oil in a pan, add the garlic and sauté a little.
  2. Add ginger-chilli paste, sliced onions and sauté till translucent.
  3. Add the red chilli paste and mix well and add the remaining ingredients and toss well.
  4. Allow to cool a little.
  5. Keep aside.

For the pancake batter

  1. Blend the sprouted moong, ginger-green chilli paste and enough water to prepare a batter of dropping consistency.
  2. Add the turmeric powder, coriander, 2 tsp hot oil, soda bi carb, salt and whisk well.
  3. Simmer oil on an non stick tawa, spread laddleful of batter to prepare a 5-6 inch pancake. Drizzle oil and flip when under side is done.
  4. Cook till the other side is done.
  5. Spread the green chutney on the pancake and place the Paneer Stuffing on it and fold the sides.
  6. Serve hot immediately with ketchup.
