  1. Combine the spinach and fenugreek leaves in deep non-stick pan, mix well and cover with a lid and cook on a medium flame for 6 minutes, while stirring occasionally.
  2. Cool and blend in a mixer along with green chillies, ginger and garlic till smooth. Keep aside.
  3. Heat the oil in deep non-stick pan, add the onions and sauté on a medium flame for 2 minutes.
  4. Add the prepared spinach-fenugreek mixture, milk and salt, mix well and cook on a medium flame for 3 minutes ,while stirring occasionally.
  5. Add the paneer, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
  6. Serve hot.

I love Palak Paneer....and adding methi to the recipe and use of low- fat paneer makes it more healthy and low in calorie...Perfect for weight watchers!
