For The Dough
2 cups plain flour (maida)
1/2 cup ghee
salt to taste

For The Stuffing
3 cups grated paneer (cottage cheese)
1 tbsp sesame seeds (til) , powdered
1 tbsp green chilli paste
1 tsp chaat masala
1 tbsp lemon juice
20 raisins (kismis)
1 tbsp finely chopped cashewnuts (kaju)
1 tbsp sugar
1/4 tsp asafoetida (hing)
1/2 tsp carom seeds (ajwain)
1 tsp grated ginger (adrak)
1 tsp roasted cumin seeds (jeera) powder
1 tbsp roasted coriander (dhania) seeds powder
1 cup chopped coriander (dhania)
3 tbsp grated coconut
salt to taste
oil for frying
plain flour (maida) for dusting
For the dough

    For the dough
  1. Combine the flour salt and ghee and using your finger tips mix till breadcrumb texture appears.
  2. Add enough water and knead well into a soft dough.
  3. Cover with a wet muslin cloth and keep aside for 30 minutes.

For the stuffing

  1. Combine all the ingredients in a bowl and mix well.
  2. Keep aside.

How to proceed

  1. Divide the dough into small equal portions and shape them into small balls.
  2. Roll them into a small circle of 4" diameter and dust them lightly with the plain flour.
  3. Place 2 tsp of the prepared stuffing at the center and bring the sides together to seal the edges.
  4. Cover the filling with the dough by slowly stretching it over the filling.
  5. Seal the ends and remove excess dough,roll gently again with rolling pin.
  6. Heat the oil in a kadhai and deep fry the kachoris 3-4 at a time till they turn golden brown and crisp from all the sides.
  7. Drain on an absorbent paper and serve hot.
