Pakoda and anardana chat brings forth a delectable combination of spicy gram flour coated fried pakodas with sweet anardana or pomegranates. Serve this pakoda and anardana combination on a rainy day with a hot cup of tea.

Ingredients

For The Pakodas
2 brinjal (baingan / eggplant) , sliced
3 potatoes , sliced
15 to 20 spinach (palak) leaves
1 cup besan (bengal gram flour)
1/2 tsp turmeric powder (haldi)
1/2 tsp ginger-garlic (adrak-lehsun) paste
salt to taste
oil for deep frying

Other Ingredients
1/2 cup curds (dahi)
khajur imli ki chutney
green chutney
salt to taste
rock salt to taste
cumin seeds (jeera) powder to taste
chilli powder to taste
3 tbsp pomogranate seeds (anardana)
sev to taste
Method
For the pakoras

    For the pakoras
  1. Combine the besan, water, salt, haldi and ginger-garlic paste and mix well to make a thick batter.
  2. Heat oil in a kadhai, dip the vegetable slices and spinach leaves into the batter and deep fry till they turn golden brown and crisp from all the sides.
  3. Drain on an absorbent paper and keep aside.

How to proceed

  1. Take a large shallow dish and place a layer of the pakoras.
  2. Spread some curds, green and meethi chutney and the anardana.
  3. Sprinkle salt, cumin seeds powder and chilli powder
  4. Place another layer of pakoras followed by curd etc.
  5. Continue till all the pakoras are over.
  6. Serve immediately.
