A payasam recipe with a nice twist. Carrot payasam or kheer is condensed milk cooked with grated carrots, sugar and cardamoms. An unique orange coloured kheer recipe with an irrestible taste.

6 grated carrot
2 cups grated coconut
1 ltr milk
200 gms cashewnuts (kaju)
100 gms almonds (badam)
4 to 5 cardamoms
6 to 8 cups sugar
  1. Soak the almonds in i cup milk for atleast 8 to 10 hours and keep aside.
  2. Combine the carrots along with coconut, soaked almonds, cashews and blend in a mixer to a smooth paste.
  3. Transfer this paste in a deep pan, add 3/4 litre of milk and bring to boil.
  4. Add 6 to 8 cups of sugar, mix well and simmer for 15-20 minutes.
  5. Serve hot.
