Orange Carrot Soup is a light, golden coloured soup subtly flavoured with bay leaves, cumin and black pepper. The flavour of slightly sweet and nutty carrots merge beautifully with the tangy, sweet taste of the oranges in this soup.

Makes 7 to 9 servings
- Heat ghee in a deep pan and add the cumin seeds and bay leaf.
- Add carrots, salt and sugar, mix well and add the flour in orange juice and add it to the carrot soup.
- Simmer for a minute and serve hot garnished with oats.
