For making the onion pudina chutney, take a fresh bunch of phudina. An aromatic bunch with bright green leaves indicates the mint is fresh.
Remove the leaves from the stem and discard the stems.
Place the clean mint leaves in a strainer and wash them under running water.
Place the mint leaves on a chopping board and roughly chop them.
Put them in a cup and measure 2 cups.
Also, take the coriander bunch.
Place it on a chopping board, cut the thick stem. Separate the good leaves and place them on a colander.
Wash the dhania leaves.
Chop the coriander roughly, measure 1 cup and keep aside.
For the Punjabi style green chutney, in a chutney jar, add the mint leaves.
Now, transfer the coriander.
Furthermore, add the green chillies. The quantity can be adjusted to suit your palate.
Add the onions. They provide volume to the onion pudina chutney.
Add the ginger. Peel and roughly chop the adrak before adding.
Add the sugar.
Next, add the lemon juice. On preserving, the lemon juice will help in maintaining the lush green colour.
Add around ¼ cup of water.
