Ingredients

For The Idli Batter
3/4 cup broken wheat (dalia)
3/4 cup semolina (rava)
2 tbsp chana dal (split bengal gram)
2 tbsp urad dal (split black lentils)
1 cup curds (dahi)
1/2 tsp baking powder
salt to taste

For The Vegetable Mixture
1/2 cup grated carrot
2 tbsp chopped french beans
2 tbsp coarsely mashed green peas
2 tbsp finely chopped onions
1 tsp oil
1/2 tsp mustard seeds ( rai / sarson)
a pinch of asafoetida (hing)
1/2 tsp finely chopped green chillies
1/4 tsp ginger (adrak) paste
salt to taste
1/4 cup chopped coriander (dhania)
Method
For the idli batter

    For the idli batter
  1. Dry roast the broken wheat and semolina on a tava (griddle) till they are golden brown in colour. Remove and keep aside in a bowl.
  2. Dry roast the chana dal and urad dal on a tava (griddle) till they are golden brown in colour. Add ½ cup of water and allow to cook on a slow flame till they are tender.
  3. Mash the dals lightly and add to the broken wheat and semolina.
  4. Add all the remaining ingredients and enough lukewarm water to make idli batter. Keep aside.

    For the vegetable mixture
  1. Heat the oil in a small pan and add the mustard seeds to it. When they crackle, add the asafoetida, green chillies and ginger paste.
  2. Add the onions and sauté till they turn golden brown.
  3. Add the carrots, french beans, green peas, salt and a little water and cook covered till the vegetables are tender and the mixture is dry.
  4. Switch off the flame, add the coriander and mix well.
  5. Divide the mixture into 24 equal portions and keep aside.

How to proceed

  1. Place a spoonful of the idli batter into each greased idli mould.
  2. Place a portion of the vegetable mixture over the idli batter.
  3. Pour a spoonful of idli batter to cover the stuffing on each idli mould.
  4. Steam in a steamer for 10 to 12 minutes.
  5. Repeat steps 1 to 4 to make more idlis.
  6. Serve hot.

I tempered this with jeera , pepper and the chana and urad dals is a little oil just like rava idli and added the fried veggies in the dogh itself. scame out quite well!

Elaborate recipe...but worth it!!....its like a complete meal which covers Complex carbs, protein, minerals and vitamins....best breakfast option for your kids.
