  1. Place bulgar wheat in a large bowl.
  2. Add the boiling water and leave to soak for 30 mins., stirring occasionally with a fork until the water has been absorbed.
  3. Whisk together the lemon juice, oil and seasoning. pour over the bulgar wheat, add the herbs and mix well.
  4. Stir in the remaining ingredients.
  5. Cover and chill.
  6. Serve garnished with lime wedges and black and/or green olives.
