Nutritious Bulgar Wheat Salad

This salad is a source of vitamin b,vitamin e ,fibre ,monounsaturated fats. therefore it is good for babies and expectant mothers.
- Place bulgar wheat in a large bowl.
- Add the boiling water and leave to soak for 30 mins., stirring occasionally with a fork until the water has been absorbed.
- Whisk together the lemon juice, oil and seasoning. pour over the bulgar wheat, add the herbs and mix well.
- Stir in the remaining ingredients.
- Cover and chill.
- Serve garnished with lime wedges and black and/or green olives.
