A great one pot meal that is not only filling but satisfying. It is simple to make but packs a great punch of taste. Great when you are under weather to open up those sinuses.

Noodles Veggie Soup recipe - How to make Noodles Veggie Soup

Preparation Time:    Cooking Time:    Total Time:     Makes 4 serving

Ingredients
2 cups of water
4 sheets of seaweed
1 small bunch of spring onions
6 tbsp soy sauce
2 tsp pickled ginger (adrak)
1/4 cup chopped white mushrooms (khumbh)
1/4 cup chopped broccoli
1/4 cup cut soft tofu
1/4 cup baby corn
1/4 cup boiled noodles
salt to taste
hot sauce , optional
Method
    Method
  1. Boil the water, cut the sheets of sea weed to bite sized pieces and cook till the sea weeds are soft.
  2. Add the green onions, mushroom, broccoli, baby corn and cook for 2 minutes.
  3. Soak the pickled ginger in water for 2-3 minutes, remove the ginger and add the water to above.
  4. Add the tofu, soya Sauce and salt and mix well.
  5. Add the cooked noodles and toss well.
  6. Serve hot with hot sauce if required.
