Mushroom and herb filled tomatoes are a lovely recipe for stuffed tomatoes with the delectable combination of chopped mushroom buttons with herbs as filling. Enjoy this vegetable treat with parathas or rotis.

Mushroom and Herb Filled Tomatoes recipe - How to make Mushroom and Herb Filled Tomatoes

Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings

6 large tomatoes , scooped and deseeded
1 tsp butter
1 onion , finely chopped
100 gms finely chopped mushrooms (khumbh)
2 tsp plain flour (maida)
150 ml scalded milk , flavoured with mustard , bay leaf , peppercorns (kalimirch) and nutmeg (jaiphal)
1 capsicum , cut into 2" cubes
2 tsp mixed herbs
1 pinch chilli powder
salt and freshly ground black pepper powder to taste

For The Topping
2 tbsp fresh bread crumbs
1 tbsp butter
1 tsp finely chopped garlic (lehsun)
1/2 tsp dried basil leaves
  1. Heat the butter in a pan, add the onions and mushrooms and sauté for 5 minutes.
  2. Add the flour and strained hot scalded milk, mix well and cook till the mixture becomes thick.
  3. Add the capsicum, herbs, chilli and salt, mix well.
  4. Remove from the flame and cool slightly.
  5. Fill the tomatoes with this filling and top with breadcrumbs.
  6. Heat the butter in a pan, place the tomatoes and cook till they are soft and cooked.
  7. Serve hot.
