Yummy mushroom and spring onion curry that goes well with roti, paratha aur jeera rice!

Mushroom Spring Onion Subzi recipe - How to make Mushroom Spring Onion Subzi

Preparation Time:    Cooking Time:    Total Time:     Makes 4 servings

2 cups quartered mushrooms (khumbh)
12 spring onions , cut diagonally
5 stalks spring onion greens , chopped
3 tbsp chopped garlic (lehsun)
1 tbsp rice flour (chawal ka atta)
1 cup whisked curds (dahi)
3 cloves (laung / lavang)
3 green chillies , chopped
2 tsp coriander (dhania) seeds powder
sal to taste
1/2 tsp chilli powder
1/2 tsp turmeric powder (haldi)
  1. Heat a non-stick pan, add the garlic and roast for a minute. Add the mushrooms and cook for 3-4 minutes on low heat.
  2. Add the rice flour and mix well and saute for 2 minutes.
  3. Add the curds, mix well and cook till the mixture becomes thick.
  4. Add the cloves, spring onions, green chillies and cook on low heat for two minutes.
  5. Add coriander powder, salt, chilli powder, turmeric powder and 1/2 cup of water, mix well and cook for a two to three minutes.
  6. Add spring onions greens and mix well.
  7. Serve hot with roti, paratha or jeera rice.
