An awesome recipe, Mushroom noodles has the unique combination of boiled noodles with sesame seeds, peanut sauce, grated carrots and chopped mushrooms. Truly an excellent snack or side dish recipe which can be made into meal when paired with a soup.

Mushroom Noodles recipe - How to make Mushroom Noodles

Preparation Time:    Cooking Time:    Total Time:    


1 onion, sliced lengthwise
1/2 cup grated carrot
1/2 cup chopped mushrooms (khumbh)
1 packet of noodles
1 tbsp sesame seeds (til)
1/4 cup peanut sauce
oil for frying
salt to taste
1/2 cup groundnut oil
1/2 cup peanuts
2 fresh chilly
1 slice fresh ginger (adrak)
4 garlic (lehsun) cloves
1/3 cup unsweetened coconut milk (canned or fresh)
2 tsp dark soy sauce
1 tsp sugar
1 tbsp lemon juice
pinch of salt (add to taste)

For the peanut sauce

  1. Heat peanut oil in saucepan.
  2. Turn off heat and add the peanuts and cook until golden brown.(do not let them burn!)
  3. Transfer this to a food processor and blend to a past.
  4. Add chilies, ginger, garlic and blend.
  5. Add the remaining ingredients and blend until smooth.

For the noodles

  1. Boil noodles in water with salt until cooked (tender)
  2. In a frying pan heat the oil and add the onions and carrots.
  3. Cook until it starts to turn golden brown, then add the mushrooms.
  4. Cover with lid and cook for 5 mins.
  5. Then add the sesame seeds and the noodles to the pan and stir well.
  6. Add the peanut sauce and mix well.
  7. Serve hot.
