This is a really flexible recipe. for example, donœt use cheese if you so desire. you can also chop and change or add to the vegetables according to what you have in your fridge. broccoli is a yummy addition, or replacement if you donœt like capsicum. an easy meal if you want something filling.

4 large potatoes, brushed
100g button mushrooms (sliced thinly)
1 red capsicum (diced finely)
1 cup of cheddar cheese
1/2 cup flour
1/2 cup soy milk
