Multigrain Namak Para recipe - How to make Multigrain Namak Para

1 cup plain flour (maida)
1/2 cup fine semolina (rava)
1/2 cup rice flour (chawal ka atta)
1/2 cup whole wheat flour (gehun ka atta)
oil for deep frying
3 tbsp oil and 1 tbsp ghee for dough
1 tsp carom seeds (ajwain)
salt to taste
  1. Combine all the ingredients in a bowl and make hard dough using warm water.
  2. Let the dough rest for 1/2 hr and then divide the dough into equal sized balls.
  3. Roll the ball with rolling pin onto a dry surface and make thick roti of it making sure not to roll it too thin .
  4. Use fork to make marks on entire roti so as not to puff up in oil.
  5. Use knife to cut out thin strips vertically (around a finger in width) and then make one strip horizontally .
  6. Deep fry these strips in hot oil on slow to medium flame until they are light pink in color.
